IfI had sufficient time and the consciousness to plan, I'd wear something restrained. Simple. And something that matches the rest of my attire. Maybe a JLC MUT? Maybe a Reverso? Maybe a less complex looking Patek Philippe? I guess it depends on what I have with me. But, funny thing, every time I'm meeting an important minister type, I've never once thought about what watch I was wearing. Because I realized I didn't have time to plan in advance and I'm traveling and I don't travel with multiple watches. I once had dinner with the Speaker of the House, and this was at my home town, and I don't even remember what I was wearing... Maybe a Patek? I've met Royals while wearing rather extremely casual watches (most recently, I was probably wearing a matte titanium Bulgari Octo Finissimo in the presence of multiple Royals) - and I definitely wasn't thinking about my watch/clothes/shoes/haircut - I was more concerned with how I address her as "Excellency" or "Highness" and the other necessary protocol. So, while we plan all of this out... The best made plans never come to light, because during the actual event, one really doesn't think about it. There's an American saying "the best made plans of mice and men often go awry" meaning we plan all of this and things don't always go according to plan!
